Cave Aged Cheddar from Wookey Hole: 18 months underground, worth every day
Wookey Hole is a network of natural caves in Somerset, England, where constant temperature and humidity create conditions that no controlled environment can replicate. This Cheddar is aged there for 18 months, developing a texture that is both creamy and crumbly, and a flavour that is rich, nutty and earthy with a long, satisfying finish. It is a proper British Cheddar, made the way it should be.
How to enjoy it?
On a cheese board it holds its own against anything. Pair it with a Cabernet Sauvignon and it sings. Also exceptional with a good chutney, some walnuts, and crusty bread. If you want to cook with it, it melts beautifully into a gratin or a toasted sandwich that will ruin all other toasted sandwiches for you.

I was brought up as a child near Cheddar, to escape Nazi bombers. What a surprise to find this excellent cheese on sale in Australia, having lived here in Australia for decades. Just the right taste and slight crumble.
