Itche Bai cheese is a semi-hard cheese from the Pyrenees, made from ewe and goat milk.
It has a beautiful ivory colour and a reddish-brown natural rind. The softness of the ewe milk combined with the finesse of the goat milk brings a delicate nutty and fruity flavour to this beautiful cheese.

As usual Deliss did not disappoint with the Tomme brebis chevre. A good cheese that should please everyone. It was an important part of my Christmas meal, together with the foie gras and the saucisson.

Flavour and texture similar to Manchego, possibly a little firmer. I enjoyed it. I'll stick to supermarket Manchego due to cost, though.
