Itche Bai cheese is a semi-hard cheese from the Pyrenees, made from ewe and goat milk. It has a beautiful ivory colour and a reddish-brown natural rind. The softness of the ewe milk combined with the finesse of the goat milk brings a delicate nutty and fruity flavour to this beautiful cheese.
