Tomme Brebis Chevre from the Pyrenees Mountains!
Itche Bai cheese is a semi-hard cheese from the Pyrenees, made from ewe and goat milk.
It has a beautiful ivory colour and a reddish-brown natural rind. The softness of the ewe milk combined with the finesse of the goat milk brings a delicate nutty and fruity flavour to this beautiful cheese.

My favourite style of French cheese.
As usual Deliss did not disappoint with the Tomme brebis chevre. A good cheese that should please everyone. It was an important part of my Christmas meal, together with the foie gras and the saucisson.
Flavour and texture similar to Manchego, possibly a little firmer. I enjoyed it. I'll stick to supermarket Manchego due to cost, though.
Thanks for taking the time to share your opinion about our Tomme Brebis Chevre John.
However, it is not at all similar with a Manchego sorry, different texture, flavour...
