Mimolette Vieille: the aged French cheese that stops people in their tracks
Mimolette is one of those cheeses that makes people stop and ask what it is. The deep orange colour, the rugged, cratered rind that is the hallmark of a properly aged Mimolette, the dense crumbly interior, it looks unlike anything else on a board. And then you taste it: butterscotch sweetness, roasted nuts, and a long savoury finish that builds as it ages. At 12 months minimum, this is Mimolette at its most expressive.
Originally from Lille in the north of France, each wheel is hand-selected for its rich, complex flavour. Cut to order.
