It’s quite tasty but the last 40 month old Reggiano tasted more of fruit. Didn’t know there was such a variation in the same aged cheese.

I can't talk about your last Parmigiano Reggiano 40 months you tried because you did not get it from us, but we're glad to hear you found our aged Parmigiano Reggiano cheese tasty.
The aging process can bring out different flavour profiles even in Parmigiano Reggiano cheese of similar age.
Slight variations in conditions, such as temperature and humidity during aging, can result in subtle differences.
Obviously milk source is an important factor as well.
The fruity notes in the 40-month variety you mentioned are a great example of this even though the dominant flavour notes for a cheese that has been aged that long should be nutty and umami.
The fruity flavour is more commun in younger cheese and at that level of maturation becomes more 'Hints' rather than a dominant flavour.
May be the Parmigiano Reggiano you tasted before was a younger cheese.

This is by far the best I have ever had, I cant rave about this enough. Will sure be buying this again. The remaining cheese I have is looking grim as a comparison. My 5 year old loves it as well and that is saying something. :)
