Made from raw sheep's milk and aged in the natural caves of Combalou in the village of Roquefort-sur-Soulzon, this is one of the oldest cheeses in France and one of the most protected. The blue-green veins come from Penicillium Roqueforti spores introduced during production, giving Roquefort its signature tangy, salty intensity. Aged for a minimum of 3 months, the texture is creamy and smooth, the flavour bold but never harsh.
How to enjoy Roquefort AOP?
On a cheese board, spread it on a crisp baguette and drizzle a little honey on top. The sweetness cuts through the saltiness beautifully. Add some fig and walnuts alongside and you have a classic combination that needs nothing else. It also works brilliantly crumbled into green salads or stirred through a warm sauce for steak or pasta.
Wine pairing: Roquefort pairs best with sweet whites like Sauternes or Barsac, or with a powerful red if you prefer to go in a different direction.
