Built for a gathering
At 1 kilo, this is the centrepiece your table deserves. Easy to unmould and slice, it serves a crowd beautifully. Plan on 50g to 75g per person, more if you want to be generous (and you should).
How to enjoy it
On toasted bread it is already exceptional. Pan-fried and laid over an eye fillet for a Tournedo Rossini, it is unforgettable. My personal take is with a high-marble Wagyu. Not very French, but absolutely worth it.
