Made from raw cow's milk in the Jura Massif, Comté AOP has been produced for over a thousand years using the same traditional methods. The wheels are aged in cellars where temperature and humidity are carefully controlled, developing a satiny, ivory-coloured paste with a flavour that deepens with time. At 18 months, Comté is mild enough to please everyone at the table, with just enough nuttiness and sweetness to keep things interesting.
How to enjoy Comté AOP?
On a cheese board it needs nothing more than good bread and perhaps a slice of saucisson. In the kitchen it melts beautifully: use it in gratins, soufflés, croque-monsieur or fondue. It is also one of the rare cheeses that works equally well at breakfast, at apéro, and as part of a main course.
