Comte AOP 36 Months is a traditional cheese that has been made from raw milk in the Jura Massif region of France for more than 1000 years. It has a unique satiny, ivory-coloured body and a wonderful taste all its own.
Comté AOP 36 months, a very different Comté!
Aged for around 36 months, this Comte develops crispy crystals called, Tyrosine and its flavour is much stronger than an 18- or 24-months Comte cheese. With a particular taste, this cheese may not please every palate but is a delight for cheese connoisseur.

The 36 months aging really gives this Comte some backbone, not dissimilar to an aged Gruyere and very morish. Definitely a big step up from the less aged Comte’s.

Just like the ones I had in France, with the little crusty jewels in them. Have not found Comte of this quality in Australia till now.
