1000 days. That is how long Gouda Millennium is aged, on wooden boards that slowly draw out the moisture and concentrate every bit of flavour into a dense, crumbly cheese with a satisfying crunch. The result is unlike any Gouda you have tried before: deep caramel sweetness, roasted hazelnut, and those characteristic white crystals that form only with serious aging. It melts on the tongue and lingers.
Made in Oudendijk in the Netherlands from cow's milk, aged for just under three years by a producer who understands that patience is the only shortcut worth taking.
How to enjoy it?
Break it rather than slice it. Serve with dark honey and walnuts, or alongside a strong ale or an aged port. It also pairs beautifully with dried figs or a good dark chocolate if you want to push the caramel notes further.
