At that age, the texture has become firm, grainy and crumbly, and the flavour has developed into something genuinely complex: sweet, tangy and nutty with a long, lingering finish. Vegamancha is a producer from La Mancha in Spain, where Manchego sheep graze on the dry plains that give this cheese its character. This is the real thing, AOP certified.
How to enjoy it?
If you like sweet and savoury together, pair it with quince paste. It is one of those combinations that makes complete sense the moment you try it. For a drink pairing, a dry sherry is the classic choice and it works beautifully. It also holds its own on any cheese board alongside stronger cheeses.
