The extended aging concentrates the flavour into something deeply savoury, crystalline and complex: salty, nutty, with a long fruity finish that lingers.
How to enjoy Aged Parmigiano Reggiano?
Break it rather than slice it; the texture calls for it. Serve at room temperature with a full-bodied red: an aged Barolo, a Chianti Classico Riserva, or a robust Côtes du Rhône all work beautifully.
