Chalet du Jura, Vacherin Mont d'Or style

Vacherin Mont d'or cheese is called the holy grail of French raw milk cheese for a reason.
Chalet du Jura is a pasteurised version of Vacherin Mont d'or but has definitely not lost its appeal and character in the process.
If you let it ripen, you can also eat Chalet du Jura cheese straight out of the pot, no need to bake it. Dip some fresh baguette in it and scoop it up.
Careful though, you may end up going all in with a spoon!
