The traditional aroma of L'Etivaz is enhanced by a wood-fired production process. Traditionally made in Switzerland, L'Etivaz AOP is a semi-hard cheese made from raw, non-transported cow's milk in the mountain pastures between May 10th and October 10th. We found this cheese was quite dry and did not seem have too much flavour, I think we were spoiled by the Torndirrup Appenzelle we had before, that was good, It had a fresh tasting flavour that stood out.

Excellent flavour and texture, one of the best Swiss cheeses I've tried. It is a regular on the cheeseboard.
Etivaz is a beautiful full flavor and fruity Swiss cheese.
In my opinion, Etivaz is better than French Comte or even a Swiss Gruyere.
I will buy it again.

We had never come across l'Etivaz AOP before despite living in France for many years so it was a great surprise to find it at Deliss. It is absolutely delicious - as good if not better than an aged Comte. Highly recommend.
