Matthieu from L'Artisan Cheese has created another masterpiece with this Organic Raclette.
Everything is done by hand, from skimming to moulding, and every batch receives special attention.
The milk comes from the Smith Family Organic Farm on the Great Ocean Road. The Smiths look after their pastures organically with no pesticides, herbicides or GMOs. They don’t feed their Jersey cows any silage, which makes for happy cows and great milk.
This translates into milk with much higher calcium content enabling Matthieu and his team to make semi hard and hard cooked cheeses in the best conditions.
Because of that it is not as "greasy" as your usual French Raclette and you will need to slice it finer and/or heat it for longer to reach the melting point.
How much Raclette cheese should I plan for a raclette party?
You are looking at an average of 200g of Raclette cheese per adult. Small eaters about 150g of Raclette per person, big eaters about 250g per person, hence 200g of Raclette cheese per person on average!
