Castaing's Duck Foie Gras Mi-Cuit is made in the South West of France and only semi-cooked, which means it keeps far more aroma and finesse than a fully cooked Foie Gras in a jar. The texture is smooth and luxurious, and the flavour is unmistakably authentic.
How to Eat Foie Gras?
It is ready to eat and perfect on slightly toasted bread with Black Cherry and Thyme Jam.
You can also pan-fry it for a classic Tournedos Rossini. Use a very hot pan and sear for about 30 seconds on each side. No longer, or it will melt. Deglaze the pan with red wine or aged port, add softened shallots and let it simmer gently for a sauce that is worth every second.
Leftovers can be sliced, wrapped tightly and frozen. Freezing this Foie Gras does not affect its flavour or texture.
How Much Foie Gras Per Person?
Plan on 50 to 75g per person, and a little more for Christmas or New Year celebrations.
